This week is some good old comfort food. They may sound difficult, but they are actually really easy and simple to make. These recipes will also feed you for at least a couple of days, which in my house is a great feat.

Easy Bake Chicken and Rice
- 1 can cream of chicken soup
- 1 cup water
- 3/4 cup uncooked long grain white rice
- 1/2 tsp. paprika
- 1/2 tsp. pepper
- 2 boned, skinned chicken breasts
- 1/4 tsp. salt

Preheat oven to 375. In an 8”x8” baking pan, mix the soup, water, rice, 1/4 tsp. of paprika, and 1/4 tsp. of pepper. Sprinkle the chicken breasts with salt, 1/4 tsp. pepper and 1/4 tsp. paprika, then place on top of the rice. Cover with foil (tightly). Bake 45-60 minutes.

Shepard's Pie
- 1 pound ground beef or chicken or turkey
- 1/2 cup ground beef mix or your favorite seasonings for ground meat
- 1 cup water
- Mashed potatoes (from 3 large round white potatoes)
- Canned or creamed corn or peas (optional)
- One small chopped onion
- 1/2 cup Cheddar or Parmesan cheese, grated

Preheat the oven to 350.

Cook the ground beef on high for about 15 minutes or until brown and drain. Cook the onion with the ground beef, add after the frist 10 minutes of cooking the beef. (Rinse if you want to get more fat off.) Add the seasonings and water and simmer for 15 minutes.

Meanwhile peel up the potatoes and cut into 1" chunks. Simmer until soft. Drain, mash, and add 11/2 tablespoons of butter and 1/2 cup of milk (may be more or less depending on how creamy you like your potatoes). Make sure you melt the butter before you add it to the potatoes.

Put the meat into a 9x9 baking dish. Pour the corn or peas on top if using. Cover with the mashed potatoes. Sprinkle the cheese on top. Bake at 350 for 25 minutes.

Chocolate Bread Pudding
- 1/2 cup of Hershey's chocolate syrup
- 5 slices of bread (white, raisin, or oatmeal)
- 3 eggs
- 2 cups of milk (preferably 1%)
- 1/2 cup packed brown sugar
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon ground sugar

If the bread crusts are thick, cut them off. Stack the bread, cut it into bite-size squares, and dump the squares into a large microwave bowl. In a medium bowl, beat the eggs, then mix everything else in. Pour the egg mixture over the bread, squashing the bread with a spoon so it gets completely soaked. Nuke on medium power for 10-to -12 minutes, or until a knife inserted in the center comes out almost clean (the edges will be a little firmer than the center). Set aside for two minutes, the still hot pudding will finish cooking as it sits there. Top with a little bit of whipped cream.
