Breakfast does a body good

The best way to start a morning off right is to eat some breakfast. Research shows that school-age breakfast skippers often feel tired, irritable or restless in the morning, but those who regularly eat a morning meal have a better attitude toward school and have more energy by late morning. If that weren't a strong enough argument for a morning meal, consider this: Breakfast also can help control weight and reduce the risk of heart disease.

Apple puff pancake
- 2 Tbs butter
- 2 eggs
- 1/2 cup milk
- 1/2 cup flour
- pinch of salt
- 2 tbs brown sugar
- 1/4 tsp cinnamon
- 1 apple, peeled, cored, and thinly sliced

Preheat the oven to 400. Melt the butter in a pie pan in the oven as it's heating and swirl it around to coat the edges. Mix together the eggs, milk, flour, and salt. Sprinkle brown sugar and cinnamon over the melted butter. Lay the apple slices down in the butter. Pour the batter over the apple and bake for 30-35 minutes. Take it out and turn it over onto a serving plate. Cut in slices and serve. Sprinkle with powdered sugar, if desired.

Traditional French toast
- slices of day old bread
- 1 cup milk
- 3 eggs
- dash of salt
- 1 tsp of sugar
- 1 tsp of cinnamon
- 1 tsp of vanilla

Use Texas Toast, sliced French or Italian bread, or some other sturdy day old bread for this recipe.

Mix the milk, eggs, salt, sugar, vanilla and cinnamon together; pour in a shallow dish so you can easily dip the bread in.

Dip each piece of bread, turning so that it can soak up the milk and egg mixture. Heat a skillet or griddle with a bit of butter in it. Lift up the bread and let it drain just a bit, then fry until brown. Turn over and cook until the other side is done.

Serve with powdered sugar or maple syrup. Leftovers freeze wonderfully and make a nice weekday breakfast. Just pop the frozen bread into your toaster.

Breakfast burritos
For a quick grab-and-go breakfast, make up your own breakfast burritos and freeze them. I like mine with just fried potatoes, scrambled eggs, and cheese, but you could easily add cooked bacon or sausage.

- 12 flour tortillas
- 6 eggs, scrambled
- 6 potatoes, diced and fried
- grated cheese
- cooked and diced bacon or sausage (optional)
- salsa (optional)

Scramble the eggs the way you normally would and cook up the potatoes.

Bake the bacon or fry up the sausage. Soften the tortillas so they'll be more pliable, maybe put them on a plate and put them in the microwave for 30 seconds. Lay out the tortillas and add the filling ingredients. Roll up, tucking the ends in first.

Wrap in plastic wrap, then place all the burritos in a freezer bag so you can find them easily.

To eat, heat in the microwave a few minutes until warmed through.
